How to Cook Beer-Battered Fish Tacos

First start out with a shallow dish that you will be mixing the beer and sauce ingredients in. Mix 1/2 teaspoon of salt, 1 cup of dark beer, 1 cup of all purpose flour in the shallow dish. Boil a large pot with 1 inch deep of oil to 360 degrees. If you are using fresh cod make sure the fish is completely descaled and cleaned otherwise you can buy 1 1/2 pounds of cubed cod fillets from any local deli. After cleaning the fish take your 1 1/2 pounds of cod fillets and cut them into rectangular cubes. Dip the cubed cod into the boiling oil with a fork until fish has nice coat of batter. Begin frying fish in oil for 2 minutes or until they are nice and golden. Proceed to let fish drain temporarily on paper towels. Continue to fry the rest of your fish. Use either two corn or flour tortillas for the fish tacos. Place 1/2 cup of cabbage on the center of the tortillas followed by a piece of fish. Begin to garnish the fish with mayonnaise, salsa, and a lime cut into wedges.

For a Baja themed dinner you could serve the fish tacos with a black beans, diced mango on the side, and fresh tortilla chips with salsa. Another good idea would be to substitute the salsa with guacamole.
